- Cacao powder will give the biscuit a unique chocolate flavor.
- Walnuts will add a spicy flavor. Chop the nuts.
- Take eggs and milk as liquid ingredients.
- Coconut sugar will add sweetness to our cakes. You can use any sweetener instead.
- For the airiness of the biscuit, use a baking powder.
- And of course, don’t forget about vanilla extract or powder.
When we have decided on the products for the biscuit, we proceed to the preparation of the fruit layer.
Fruit layer
I used frozen strawberries for the interlayer. You can take a fresh one. Boil the berries with a sweetener for several minutes. If there are no strawberries, take any berries.
Orange impregnation
Impregnation is also needed for the cakes. To do this, our recipe uses squeezed orange juice. Instead of juice, sweetened water will do. The impregnation will make the cakes softer and more airy.
And the final stage of preparation is a cream.
Cottage cheese cream for cake
The basis of our cream is cottage cheese in a briquette. Ricotta or soft cottage cheese is fine. Grainy cottage cheese will not work. It will not produce a smooth creamy texture.
Also for the cream we need milk powder and ripe banana puree. We use coconut sugar or any other free-flowing sweetener as a sweetener. Let’s not forget about vanilla.

How to make a chocolate banana cake with curd cream
The cake preparation process consists of several stages.
The first of these is cake baking.

Turn on the oven at 170 ° C / 340 ° F. Preparing a baking dish. We drink the biscuit in a ring or in a split form with a diameter of 16 cm.
You need to cover the bottom of the ring with parchment and foil. Press the foil against the walls of the mold. And put the ring on a baking sheet. It is not necessary to lubricate the ring.
We grease the detachable form with oil and cover the bottom with parchment. Our inventory is ready.
Let’s start making the dough
- Mix in a container oat flour, cacao, coconut sugar, baking powder, vanilla powder and milk powder. After that move on to liquid ingredients.
- Separate the whites from the yolks. Add a pinch of salt, a teaspoon of lemon juice to the proteins and beat with a mixer until a stable mass. (When tilting the bowl, the squirrels should not slip.)
- Next, we mix the yolks with milk until smooth. Then, pour the resulting mass into the proteins. And with a spatula with folding movements, mix everything.
- Then, in the resulting mass, in 3 – 4 doses, add bulk ingredients. Also mix . To prevent the proteins from settling.
- And here we add chopped nuts.
- Next, we put the finished dough into a mold.
- Cover the form with foil on top and put in the oven. Do not open the oven for the first 30 minutes. Then remove the foil and after 35 minutes check the baked goods with a toothpick. If the toothpick is clean, then the biscuit is ready.
It will take 40-50 minutes to bake.
- When ready, remove the form from the oven. Let it cool a little so that your hands do not burn. Then take the biscuit out of the mold and place it on a wire rack to cool.
- Wrap the cake cooled down to room temperature in plastic wrap and send it to the refrigerator for 6 hours.
Now you can start preparing the fruit filling.
Strawberry cake layer
For the layer, I took frozen strawberries (fresh ones are also fine). Cut the not yet completely melted strawberries into small 0.5 cm pieces. Add a little sweetener and simmer under the lid for 5 minutes.
By the way, if you cook from fresh strawberries, add two tablespoons of water.
We do not interfere with the strawberries. To keep the pieces intact. Then we cool.
Orange impregnation
After that, we proceed to the preparation of the impregnation. We will make it from oranges. We squeeze the juice. You can make an impregnation with water and any sweetener. Choose the sweetness yourself.
Cooking cream for the cake
Grind the banana in a blender until smooth. Add lemon juice to the resulting puree and mix. Then, using a mixer, combine the banana puree and cottage cheese. Add milk powder and coconut sugar to the resulting mass. And we mix it all well.
And now, our cream is ready, we get the biscuit from the refrigerator.
Now you can start assembling the cake.
Assembling a chocolate banana cake with curd cream
- Cut off the top and bottom of the biscuit. And we cut it into three equal parts.
- Put a little less than ⅓ of the cream in a pastry bag. The same amount of cream will go to the second cake. On the third, there will be a little more ⅓. Or you can divide the cream into three equal parts.
- Apply a little cream on the substrate in the center so that the cake does not slide out. And put the first cake on it. Then we soak in orange juice. Apply the impregnation with a spoon until it is absorbed.
- After that, we proceed to laying the cream. Squeeze the cream out of the bag in the form of a sausage. We do this around the circumference of the cake, starting from the edge. And we move to the middle. As a result, the cream will be in the form of a spiral. If there is no pastry bag, spread the cream with a spoon. Make a small side on the edge of the cake. To prevent the fruit filling from leaking out.
- Put half the strawberries on top of the cream. We place the fruit layer not to the very edge. Then we put the second cake. And we repeat the whole procedure: impregnation, cream, layer.
- Then the third cake. We make it out without fruit, only impregnation and cream. Align the cream with a spatula or apply a pattern.
- After that, put the assembled cake in a box or container and put it in the refrigerator for 12 hours.
