Coconut Pumpkin Energy Balls

These Energy Balls are chewy and delicious. These vegan balls are made without grains. The soft texture of the energy balls just melts in your mouth. And the combination of coconut and pumpkin seeds is delicious.

I rolled some of the balls in coconut flour, cacao and freeze dried cranberry powder. This is not a necessary procedure. And without breading, the balls are very tasty. To prepare Coconut Pumpkin Energy Balls, you only need 5 ingredients.

Coconut dessert

Coconut flour – use only flour. Coconut flakes will not work because we need to get a delicate texture of the balls. I also used coconut flour for breading.

Pumpkin seeds – lightly fry before cooking. Fried seeds will be more flavorful. When the seeds have cooled, grind them in a blender or coffee grinder.

Medjool dates – will add sweetness to our dessert. Regular dates will do instead.

Coconut oil – the liquid component of the recipe. I used refined coconut oil. But cold-pressed oil will do just fine.

Vanilla extract – will give our balls a magical taste and aroma.

Cacao powder and freeze dried cranberry powder – breading the balls. These are optional ingredients. You can skip the breading. Energy balls are delicious without it.

How to make Coconut Pumpkin Energy Balls

We start the process of making Coconut Pumpkin Energy Balls with dates. Soak pitted Medjool dates in hot water for 15 minutes. When the dates have steeped, drain the water.

Next, we need a blender. Load the dates, melted coconut oil and vanilla extract into the blender bowl. Grind everything until smooth.

Then put coconut flour and crushed pumpkin seeds in a large bowl. Mix the flour mixture with a hand whisk or just a spoon. Then add crushed dates. Collect all the ingredients into one lump. Then form balls and roll in breadcrumbs if desired.

Store Coconut Pumpkin Energy Balls in a tightly sealed container in the refrigerator for up to 3 days. For longer storage, put the dessert in the freezer.
