As a basis for cookies, I took the plum cake recipe. Changes had to be made during the preparation process. And the funny thing is that I almost forgot to put cacao in chocolate chip cookies. Vegan Cookie Ingredients
There are only seven ingredients in the Vegan Chocolate Cookie recipe. Some of them can be replaced by others.
The base of the recipe is oatmeal. Instead, I used oatmeal ground in a blender or coffee grinder. Why not oatmeal, you ask? The answer is practical. Ready-made oatmeal becomes bitter after some time of storage. And I started using cereal. This cookie recipe was made with oatmeal. With ready-made flour, the result may vary.
The next ingredient is my favorite. It contributes to the texture of the dessert. This is almond flour. You will learn about its use in desserts in an article on my blog. If you do not eat nuts, replace it with oatmeal. Just take a slightly smaller amount.
Now let’s move on to sweeteners. There are two of them in the recipe for oatmeal cookies. It’s coconut sugar and banana puree. Banana is a versatile product. It is both a sweetener and a liquid. Desserts with banana just have a magical flavor. You can use syrup instead of coconut sugar. But then you need to add a little more flour.
In addition to banana puree, there is another liquid ingredient in the recipe. This is refined sunflower oil. Instead, any odorless vegetable oil will do. You can use refined coconut oil.
Another important ingredient is cacao. For baking, I use alkalized cacao. It gives a richer flavor. But you can use whatever you like.
We will also need some baking powder, parchment and a baking sheet. And good mood.
How to make Vegan Chocolate Oatmeal Cookies
We start cooking cookies with technical points. From the beginning, turn on the oven 180°C/350°F. Then lay parchment on a baking sheet. And let’s start the cooking process.
First, mix all dry ingredients. These are Oat flour, almond flour, coconut sugar, baking powder and cacao powder. Then add butter and banana puree. Mix everything well. Form cookies from the dough. Shape and size as you wish. I made 12 cookies from this batch of dough.
