Enjoy your favorite family dish – an amazing fish pie with hake, onion and dill. Airy dough and aromatic filling, what could be better. I haven’t baked for a long time and now I decided to make up for lost time by making a fish pie.
Making a fish pie won’t take much time and the result will please you. By the way, the dough from this recipe can be used to make pizza or a pie with any other filling. If you are making a pie with fruit, add a little more sugar to the dough.
Ingredients for the recipe
All-purpose flour – the basis of the recipe. Before cooking, be sure to sift the flour.
Vegetable oil – I have refined sunflower oil. Any vegetable oil, such as olive oil, will do instead.
Water – should be warm no more than 40°C / 104°F. At a higher temperature, the yeast will not work.
Yeast – instant dry. Makes the fish pie airy.
Salt and sugar – small additions will make the dough tasty.
Hake fillet – the main part of the filling. Instead of hake, you can use any fish you like. Cut the fish fillet into small pieces.
Onion, ground allspice and dill – will give the fish pie a magical taste and aroma. Cut the onion into 1/4 rings, and simply chop the dill with a knife.
Egg – for greasing the top of the pie. With an egg, the pie will brown better. Although this process also depends on the oven. My oven does not brown the pastry very much.
How to Make Fish Pie
We start the process of making fish pie with the dough. Pour warm water into a bowl. Then pour salt, sugar and dry yeast into the water. Mix everything quickly with a spoon. Next, add vegetable oil and all-purpose flour.
First, mix everything with a spoon. Then knead the dough with your hands to make one elastic lump. I kneaded the dough for about 2 – 3 minutes. After that, pour some oil into a bowl and grease the sides of the bowl. Put the dough in the bowl and cover with cling film.
Put the bowl with the dough in a warm place for 1 – 1.5 hours. During this time, the dough should rise up to the film. When the dough has risen, separate a little more than half of the dough and put it on the bottom and sides of the pan. Make sides about 4 cm / 1.6 inches high.
Put the fish pieces on top of the dough. Then sprinkle a little salt, ground allspice and dill. And finally add pieces of onion to the filling. Then cover the filling with the remaining dough. Grease the top of the pie with egg.
Put the pie in a preheated oven at 180 ° C / 350 ° F and bake for 35 – 40 minutes. Place the finished fish pie with the pan on a cooling rack and cover with a towel on top. Let the pie cool for 30 minutes and then remove from the pan. That’s it, our magnificent fish pie is ready. Treat yourself and your loved ones to this delicious dish.

2 cups (320g / 11.3oz) all purpose flour
2/3 cup (160g / 5.6oz) warm water 40°C / 104°F
1/4 teaspoon sea salt
1/2 teaspoon sugar
1/2 tablespoon (5g / 0.2oz) instant yeast
3 tablespoons (45g / 1.6oz) refined sunflower oil
- Filling
300g / 10.6oz hake fillet
1/2 teaspoon ground allspice
10g / 0.4oz dill
200g / 7oz onion (3 pieces medium size)
a pinch of sea salt

- Pour warm water into a bowl and add salt, sugar and yeast. Stir.
- Add vegetable oil and all-purpose flour to the water. First, mix everything with a spoon. Then knead the dough with your hands until you get an elastic lump.
- Grease the bowl with vegetable oil and put the dough in it. Cover the bowl with cling film and put it in a warm place for 1 – 1.5 hours. the dough should rise to the film.
- Separate a little more than half of the dough and distribute it in the tin. Make the sides about 4 cm / 1.6 inches.
- Place the pieces of fish on the dough and sprinkle with salt, ground allspice and dill on top.
- Place the chopped onion on top of the fish. Cover the filling with the remaining dough and press the edges of the dough to the sides. Brush the top of the pie with a raw egg.
- Bake the fish pie for 35 – 40 minutes at 180 ° C / 350 ° F. Cool the finished pie in the tin on a wire rack for 30 minutes. Cover the top of the pie with a towel.
