  • Yogurt without sugar and additives.
  • Coconut sugar for sweetness. It must first be ground into powder. The coconut sugar is brown and will give the cheesecake a creamy color. May be substituted with any bulk sweetener. All ingredients should be at room temperature.

We turn on the oven 180ºC and start cooking the cake.

Melt the butter over low heat, only so that it melts, but does not boil. You can use the microwave.

Next, sift the flour and mix with butter until smooth. Whole grain flour will cause the dough to crumble.

We will bake the cheesecake in a 16 cm diameter pan. If you have a larger diameter pan, then increase the amount of ingredients. At the bottom of the mold, you need to put parchment and grease the walls with butter or vegetable oil.

(You can do without parchment by greasing the bottom with oil)

Then spread the dough evenly on the bottom of the mold. We put the dish in the oven for 10 – 15 minutes. While the cake is baking, prepare the curd mass.

In a deep bowl, mix with a mixer at low speed or with a spatula: ricotta cheese, yogurt and coconut sugar. (Sugar can be pre-ground in a coffee grinder).

Add eggs to the resulting mass one by one. We do not interfere with a mixer for a long time so that there are no air bubbles.

How to make cheesecake

When the cake is ready, pour the curd mass into the mold and lightly tap on the walls so that the air bubbles rise up.

Reduce the temperature in the oven to 150ºC before baking the cheesecake. We bake for 50 minutes. After this time, turn off the oven, open the door a little for 25 – 30 minutes.

We take the form out of the oven onto the table and let the dessert cool slightly. Previously, you can walk with a thin knife between the cheesecake and the wall of the mold.

After cooling down, put the cheesecake in the refrigerator for 4 – 5 hours. The center of the cheesecake may shake slightly, but it will freeze in the refrigerator. After hardening, remove the cheesecake from the mold.

At your request, to make the dessert more beautiful, the top can be decorated with cream.

For the cream, you can use mascarpone or ricotta, cream and coconut sugar, or any free-flowing sweetener. Grind sugar into powder. Beat cream and sugar with a mixer until smooth, fluffy and thick.

Add cheese and mix. We decorate the dessert with the resulting mass. You can also sprinkle the surface with cocoa. But it should be noted that the cream is quite nutritious.
