Rice Bread

This unsweetened rice bread is great for breakfast and snack. I wanted to make gluten free bread. And chose rice flour. It is not sticky by its nature. The bread turned out to be crumbly.

We make rice bread, so the main ingredient is rice flour. You can use oatmeal instead. But then you get a completely different bread.

I have used two types of rice flour: polished and brown rice. You can get by with one.

Cornstarch and milk powder continue the list of ingredients. Starch adds viscosity to the dough. Powdered milk can be replaced with powdered coconut or starch. Then you get vegan bread. I thought about this when I added milk to flour. So, it was too late to change.

Now let’s talk about liquid ingredients. Although there is not much to say here. The liquid in the recipe is water and refined olive oil. Any oil will do.

At the end of the list of ingredients is salt and baking powder.

How to make rice bread

Turn the oven on at 180 ° C / 355 ° F. Mix dry ingredients in a container. Rice flour, cornstarch, milk powder, flaxseed flour, salt and baking powder. Add water and vegetable oil to the flour mixture.

Mix everything until smooth. Put the finished dough in a 10 x 24 cm mold. I put parchment in the mold. We bake bread for 45 – 50 minutes.

When ready, remove the bread from the oven. We leave it in the form for 15 minutes. Then cool on a wire rack to room temperature. When the bread has completely cooled down, we proceed to tasting.

Rice bread goes well with butter. Or coconut.

Store bread in a plastic wrap or airtight container for up to three days.

In the refrigerator for up to a week. You can also cut the bread into pieces and put it in the freezer.

  • 2 tablespoons of flaxseed flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon sea salt
  • 3 tablespoons refined olive oil
  • 350g water
