This Vegan Plum Cake is flavorful with a crispy crust. This delicious vegan dessert is free of refined sugar. Light sourness of baked plums and sweetness of coconut sugar create a contrast of taste. And all this emphasizes the aroma of a banana. Banana is a unique product for desserts. It gives sweetness and magical aroma.
Recently, on the Internet, I came across a recipe for plum pie from the New York Times. And I decided to do something similar. To do this, I had to replace all the ingredients with my own. What came out of it, you will now find out.
Cake Ingredients
- Whole wheat flour is the main ingredient in this recipe. It can be replaced with Gluten-Free oatmeal. I’ll try to do it somehow.
- Refined coconut oil. It has no smell and is good for baking. In principle, any vegetable oil without an obvious smell and taste will do.
- As a sweetener, coconut sugar. I use it in almost all of my recipes. Coconut sugar has a low glycemic index and a pleasant caramel flavor.
- Banana puree. It is well suited for any baking as a sweetener and flavoring.
- There is also some water in the Vegan Plum Cake recipe. Initially, I thought to do without it. But the dough turned out to be thick and I had to add water.
- As a filler plums, cinnamon and lemon juice. Plums are suitable for any variety. The most important thing is that the bone separates well.
You will also need a round shape 18 cm for baking. Collapsible or in the form of a ring does not matter.
How to make Vegan Plum Cake
First turn on the oven 180°C/350°F. Then prepare the baking dish. I prefer to line the bottom and sides of the mold with parchment. Instead of parchment, the form can be greased with oil. The preparatory work has been done. Let’s move on to making the cake.
In a bowl, mix whole wheat flour, coconut sugar and baking powder. Then add refined coconut oil, banana puree, water and lemon zest. Mix everything well with a spatula. Put the finished dough into the form. Then place the plum halves on top of the dough. Drizzle the plums with lemon juice and sprinkle with cinnamon.
Bake the cake for 30-35 minutes until golden brown and toothpick dry. Cool the finished Plum Cake on a wire rack to room temperature. Store the cake in a tightly closed container on the counter for three days and in the refrigerator for seven days.

Instructions
