Whole wheat flour is the basis of the recipe. If you want to make a gluten-free pie, use oat flour. All-purpose flour will also work.

Almond flour is another dry ingredient. Almond flour adds its own charm. If you do not like nuts, put whole wheat flour in instead.

Water is one of several liquid components. Water can be replaced with any plant-based milk.

Coconut sugar adds a little sweetness and a unique caramel flavour to the plum pie.

Baking powder gives the dessert airiness.

Vanilla extract has a magical taste and aroma.

Refined sunflower oil is another ingredient in the liquid group. Any vegetable oil without a distinct flavour will do instead of sunflower oil.

Bananas – both flavour and sweetener. Bananas should be ripe.

Plums – filling for the pie. Cut the plums into pieces about 1 cm.

How to Make Vegan Plum Pie


As usual, we begin the cooking process by preparing the baking pan. I have a round 18 cm / 7-inch ring-shaped pan. A split pan or a solid pan will also work. Put parchment on the bottom and sides of the pan.
Next, we begin to prepare the Vegan Plum Pie. First, mix whole wheat flour, almond flour, coconut sugar, and baking powder in a bowl. Then, put the bananas and vanilla extract in a blender. Grind everything until smooth.

Then add the plum pieces to the flour mixture and mix. Add the chopped bananas, water, and vegetable oil there. The dough should be a little runny. Put the finished dough in a baking dish and spread it in a uniform layer. Add plum pieces if desired. I divided the plums for decoration into four parts.

Bake vegan plum pie for 40 minutes in a 180°C / 350°F preheated oven. Then, leave the pie in the dish on the table for 15 minutes. Then, remove the dessert from the dish and cool it on a rack to room temperature. Then, enjoy a delicious dessert.

  • 1.5 cups (180g / 6.3oz) whole wheat flour

  • 2/3 cup (70g / 2.5oz) almond flour

  • 1/2 cup (120g / 4.2oz) water

  • 2 tablespoons (30g / 1.1oz) coconut sugar

  • 2 teaspoons (10g / 0.4oz) baking powder

  • 1 teaspoon vanilla extract

  • 1/4 cup (60g / 2.1oz) refined sunflower oil

  • 200g / 7oz peeled bananas

  • 2 cups (300g / 10.6oz) plums in pieces (10 pieces medium size)

Instructions

  • In a bowl, mix whole wheat flour, almond flour, coconut sugar, and baking powder.
  • Grind bananas and vanilla extract in a blender.
  • Add plum pieces to the flour mixture and mix.
  • Then add banana, water, and vegetable oil to the dry ingredients. Mix everything until smooth.
  • Place the dough in a baking pan lined with parchment and spread it in an even layer. Bake for 40 minutes in a preheated oven at 180°C / 350°F.
  • Remove the finished plum pie from the oven and leave it in the pan on the table for 15 minutes.
  • Remove the pie from the pan and cool it on a wire rack to room temperature.
