Vegan Muffins Ingredients
You only need eight ingredients to make Apple Cinnamon Muffins. You can replace almost any component with something more suitable for you.
The base of the dessert is made from whole grain wheat flour. You can use oatmeal instead. And then you will have a gluten-free dessert. All-purpose flour may work well instead of whole wheat flour. The dessert also contains almond flour. In principle, you can do without it. I personally love almonds in baked goods.
The liquid ingredients in the muffin recipe are banana puree and refined sunflower oil. Grind the bananas in a blender or with a fork. But it’s better in a blender. Sunflower oil can be replaced with any vegetable oil. For example, refined coconut oil. bananas also act as a sweetener in our recipe. It also gives a magical aroma.
Our recipe also contains three irreplaceable ingredients. These are baking powder, cinnamon powder, vanilla extract and apples. Before cooking, peel and seed the apples and cut them into 5-7 mm cubes.
In addition to these ingredients, to make muffins you need an 8-well muffin tin and paper liners.
How to Make Apple Cinnamon Muffins
First you need to prepare the form. Place paper inserts in each compartment. Then start making the muffins.
In a bowl, combine whole wheat flour, almond flour, baking powder and cinnamon powder. Then add banana puree, sunflower oil, vanilla extract and apple pieces. Mix everything well. Next, using a pastry bag or just a tablespoon, fill the cells of the form. I filled the cells with dough to the brim, even with a slight mound.
Bake the muffins for 20 minutes at 180°C/350°F. When the muffins are ready, cool in the pan on a wire rack for 30 minutes. Then remove the muffins from the wells and let them cool to room temperature. Store Apple Cinnamon Muffins in a tightly sealed container for 3 days in the refrigerator. Although, considering how tasty they are, the muffins are unlikely to last that long.
