This Vegan Banana Blueberry Cake is fluffy with zesty blueberry flavor. This vegan cake is made without sugar. Only natural sweetener in the form of banana. Blueberry cake is very flavorful thanks to the banana. This dessert is easy to prepare. It will especially please lovers of a plant-based diet. To make Banana Blueberry Cake you need seven ingredients. These are whole wheat flour, almond flour, bananas, refined sunflower oil, baking powder, blueberries and water.

Some ingredients can be replaced with others that are more suitable for you. Whole wheat flour can be replaced with all-purpose flour. If you use oatmeal, you will get a gluten-free dessert. If you don’t eat nuts, substitute whole wheat flour instead of almond flour.

I didn’t add any extra sugar to the cake and it didn’t turn out very sweet. This one suits me personally. If you like a sweet dessert, add one tablespoon of coconut sugar. Or what you have.

Instead of sunflower oil, any vegetable oil will do. And our main ingredient is blueberries. There is no difference between fresh blueberries and frozen ones. I personally used frozen blueberries because I already had them. To prepare the dessert we also need a 21 cm / 8 inch round pan and parchment.

How to Make Vegan Banana Blueberry Cake

First, place the parchment paper in the pan. Then, in a bowl, mix together the whole wheat flour, almond flour and baking powder. Next, use a blender to chop the bananas and add to the flour mixture. Send sunflower oil, water and blueberries there. Place the finished dough in a mold on parchment.

And then the most interesting part. I will be baking blueberry cake in a slow cooker. Place the container with the dough in the multicooker. Select the BAKE program. Bake the cake for 40 – 45 minutes at 135°C / 275°F. The dessert can also be baked in the oven for approximately 30 – 35 minutes at 180°C / 350°F.

Cool the finished cake for 15 minutes in the pan on a wire rack. Then remove the blueberry cake from the pan and let cool to room temperature. When the dessert has cooled, enjoy the deliciousness.

Ingredients

  • 1.5 cup (180g / 6.3oz) whole wheat flour

  • 2/3 cup (70g / 2.5oz) almond flour

  • 200g / 7oz peeled bananas

  • 5 tablespoons (50g / 1.8oz) refined sunflower oil

  • 2 teaspoons (10g / 0.4oz) baking powder

  • 1/2 cup (120g / 4.3oz)  water

  • 1 cup (100g / 3.6oz) blueberries, fresh or frozen

Instructions

  • In a bowl, mix whole wheat flour, almond flour and baking powder.

  • Add banana puree, sunflower oil, water and blueberries. Place the dough in the pan on parchment.

  • In the multicooker, select the BAKE program. Bake the cake for 40 – 45 minutes at 135°C / 275°F. Oven for approximately 30 – 35 minutes at 180°C / 350°F.
  • Cool the dessert in the pan on a wire rack for 15 minutes. Remove the blueberry cake from the pan and place on a plate. Let it cool to room temperature.
