It won’t take you long to make almond cookies. Take this recipe as a basis. By changing some of the ingredients, you will get a different flavor of the dessert.
Ingredients for cookies
- Almond cookies, so we need almond flour. You can replace it with any nutty one. If nuts are not allowed, add some other flour instead. Whole wheat or oatmeal is good.
- Another flour in the recipe is rice flour. I used brown rice flour.
- Cornstarch complements the dry ingredients of almond cookies.

- Vegetable oil for the airiness of almond cookies. For cooking, I took refined olive. Coconut is also good.
- Jerusalem artichoke syrup gives sweetness to our dessert. Take whatever sweetener you like.
- Dried cranberries will serve as a cookie filler. Before adding it to the dough, soak the cranberries in hot water for 15 minutes.
- We also need a baking powder.

How to make almond cookies
Turn the oven on at 180 ° C / 355 ° F. While it is warming up, prepare the dough. Mix almond flour, rice, cornstarch and baking powder in a container.
Then, in another bowl, combine the oat milk, vegetable oil, syrup and vanilla extract.
After that, pour the liquid ingredients into a container to dry. Add cranberries there and knead the dough. It shouldn’t stick to your hands. If the dough is thin, add flour.
From the finished dough we form cookies with a thickness of 10 – 15 mm. We spread the blanks on a baking sheet. Cover the baking sheet with parchment.
We bake in the oven for 10 – 15 minutes. The cookies should brown . When ready, remove the almond cookies from the oven. Cool to room temperature.
