This Pear Upside Down Cake is fluffy and flavorful. Baked pears, banana and cinnamon make the dessert irresistible. This vegan dessert is made in a multicooker. You can also cook pear cake in the oven. You just need to change the temperature and baking time. You will find baking parameters in the recipe card. Pear Upside Down Cake tastes just as good the next day after making it. To prepare it you need the most common ingredients.

Whole wheat flour – behaves very well in baking. It can be replaced with all-purpose flour.

Banana – pre-grind in a blender. Bananas play an important role in the recipe. It is a sweetener, flavoring and liquid.

Pear – without skin and seeds. Cut the peeled pear into slices 3 – 5 mm thick.

Coconut sugar – I like it for its caramel flavor. Instead, use any sugar you like. One more thing. I don’t make desserts very sweet. You may need more sugar.

Refined sunflower oil – can be replaced with any vegetable oil.

Vanilla extract and cinnamon powder give the pear cake a magical aroma and taste.

Baking powder – makes the dessert airy. One time I forgot to add baking powder and ended up with an apple scone. You can also use baking soda. But I’m more used to baking powder.

Lemon zest gives baked goods an amazing aroma. For zest, use only the yellow part of the peel.

Cold water is the liquid ingredient in the recipe. You can also use unsweetened plant milk. For example, oatmeal.

To prepare the pear cake you also need a 21 cm (8 inches) round pan and parchment.

How to Make Pear Upside Down Cake

First you need to prepare the form. Place parchment on the bottom and sides. And proceed directly to cooking.

Peel the pears and remove seeds. Then cut the pears into slices and place them on the bottom of the pan. Sprinkle the pear with 1 tablespoon of coconut sugar.

Next, in a bowl, mix together whole wheat flour, baking powder, cinnamon, lemon zest and 1 tablespoon coconut sugar. Then add the banana, vanilla extract and water to the blender jar.

Grind everything until smooth. Add the liquid ingredients to the dry ingredients in a bowl. Send vegetable oil there too. Using a silicone spatula, stir everything until smooth.

Pear Upside Down Cake

Pour the finished dough into the mold over the pears. In the multicooker, select program BAKE (Dessert) and bake for 35 – 40 minutes at 135°C / 275°F. Oven 25 – 30 minutes 180°C / 350°F. Cool the finished pear cake in the pan on a wire rack for 30 minutes.

Then remove the dessert from the mold and use two plates to turn the cake over with the pears facing up. Next, remove the parchment. That’s it for our Pear Upside Down Cake ready.

  • 1.5 cups (180g / 6.3oz) whole wheat flour or all purpose flour

  • 100g / 3.6oz peeled bananas

  • 1/4 cup (50g / 1.8oz) refined sunflower oil or any vegetable oil

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla extract

  • 250g / 8.8oz peeled pears

  • 150g / 5.3oz water

  • 2 tablespoons (30g / 1oz) coconut sugar

  • 1 teaspoon cinnamon powder

  • 1 teaspoon lemon zest

Instructions

  • Remove the skin and seeds from the pears. Cut into slices 3 – 5 mm thick. Place the pears on the bottom of the pan. Sprinkle the pear with 1 tablespoon of coconut sugar.
  • In a bowl, combine whole wheat flour, baking powder, cinnamon, lemon zest and 1 tablespoon coconut sugar.
  • In a blender, combine banana, vanilla extract and water.
  • Pour the liquid ingredients into the bowl with the dry ingredients. Add vegetable oil. Stir everything until smooth.
  • Pour the batter into the pan on top of the pears. In the multicooker, select program BAKE (Dessert) and bake for 35 – 40 minutes at 135°C / 275°F. Oven 25 – 30 minutes 180°C / 350°F.
  • Cool the finished pear cake in the pan on a wire rack for 30 minutes. Then remove the dessert from the mold and use two plates to turn the cake over with the pears facing up. Next, remove the parchment.
