Stuffed dates ingredients
There are only three ingredients in the recipe for stuffed dates. These are the dates themselves, dried apricots and dark chocolate without sugar. The recipe for delicious dark chocolate is on my website. Today I used the dates that I had the most common ones. Medjool dates also work well for this recipe. They are larger and require more dried apricots.
By the way, a few words about the filling. Any dried fruits or nuts will do here. You can also stuff the dates with chocolate ganache. So the question of stuffing is limited to your stocks.
How to cook Stuffed Dates
The process of making stuffed dates is very simple. First, pour boiling water over the dates and dried apricots for 2 minutes. Then drain the water and dry the dried fruit with a paper towel. In Medjool dates, the skin is thin and can be left unpeeled. And on ordinary dates, the skin is dense. It’s better to remove it. Also remove the pits from the dates. Then cut the dried apricots into three pieces.
Put a piece of dried apricots in each date. If you have Medjool dates, then one piece will not do. Put the prepared dates with dried apricots in the freezer for 30 minutes. In principle, this step can be skipped. But on chilled dates, the chocolate hardens quickly and drains less onto parchment.
After the dates have cooled, melt the dark chocolate without sugar in any way. Chocolate should be tempered. Then it won’t melt in your hands. You can find out how to do this in my article Homemade dark chocolate.
Dip each date into melted chocolate. And with the help of a fork, put on parchment. Sprinkle chocolate or almond pieces over the top until the chocolate has set. Or leave it as is. It’s up to you.
Then put the dates in the refrigerator for 1 hour to harden the chocolate. Store stuffed dates in a tightly closed container for 7 days in the refrigerator. For longer storage, place the dates in the freezer.

10 pieces (90g) of pitted dates
4 pieces (30 g) of dried apricots
50 g dark chocolate without sugar
Instructions
- Pour dates and dried apricots for 2 minutes with boiling water. Drain the water and remove the pits and skin from the dates.
- Cut the dried apricots into 3 parts. Put a piece of dried apricots in each date. Place dates with dried apricots for 30 minutes in the freezer.
- Melt the dark chocolate in any way you can. Dip dates in chocolate and place on parchment paper.
- Put the dates in chocolate for 1 hour in the refrigerator.
