Tiramisu Cake Without Eggs.

Do you like tiramisu? If yes then this recipe is for you. This Tiramisu Cake is a little different from the classic recipe. There are no eggs or ladyfingers in it. But there are two magic ingredients: whipping cream and mascarpone. This sweet pairing with a little vanilla and cacao is perfect. The filling of Tiramisu Cake reminds me of my favorite ice cream from my distant childhood. And all this magic rises above a crust of dates, almonds and rolled oats. Tiramisu Cake will decorate your table and will delight you and your loved ones.

Almond flour – part of the crust base. You can make your own almond flour. Simply grind the skinned almonds in a blender or coffee grinder. I do this in a coffee grinder. In it, this process goes faster and the flour is finer. 

Rolled oats – grind to flour before cooking. The finer the grind, the more delicate the texture of the crust.

Medjool Dates – will add sweetness to the crust and bring all the dry ingredients together. You can also use regular dates. 

Refined coconut oil – melted. Coconut oil can be replaced with any vegetable oil.

Mascarpone – an important ingredient in our recipe. Choose good quality mascarpone. Some types of this cheese contain a lot of liquid. This one doesn’t suit us. This can happen with one manufacturer. 

Whipping cream – minimum fat content 33%. Not everything is simple with cream either. Not every cream whips well. The whipping cream must be cold. Before cooking, cool the bowl in which you will whip the cream.

Coconut sugar – the sweet joy of the recipe. I used coconut sugar as powder. As usual, you can grind sugar in a coffee grinder. In principle, any sweetener will work for this recipe. Including maple syrup.

Vanilla extract – will give a magical taste and aroma to our dessert.

Coffee – an integral part of the tiramisu recipe. The coffee should be strong or espresso. And of course from freshly ground beans. If you only have instant coffee, this will do. 

Cacao powder – the finishing touch to the Tiramisu Cake recipe.

How to make Tiramisu Cake

We start the process of making Tiramisu Cake with dates. Start by removing the pits from the dates. Then soak the dates in hot water for 15 minutes. When the dates are soft, drain the water and place them in a blender bowl. Send coconut oil and coffee there. Grind everything until smooth.

Next, in a bowl, mix almond flour and crushed rolled oats. Add the date mixture to the flour mixture and gather everything into one lump. Then place the crust in the pan and spread evenly over the bottom. Place the crust in the refrigerator for 15 minutes. After this time, start filling the cake.

No Bake Cake

Pour whipping cream into a large bowl. Add vanilla extract and coconut sugar to the cream. Start whipping cream at medium speed. When the cream thickens a little, reduce the mixer speed. And continue beating until stiff peaks appear. 

Next, add half the mascarpone to the cream and beat with a mixer for a few seconds. Then add the remaining mascarpone and mix everything again with a mixer.

No Bake Cake

Place the finished filling on the crust and distribute evenly. Place the pan in the refrigerator for 4 hours. When our cake has hardened, remove it from the pan and sprinkle cacao powder on top. That’s it, our magical Tiramisu Cake is ready. Now you can enjoy this dessert yourself and please your loved ones.

  • Crust
  • 2/3 cup (80g / 2.8oz) rolled oats gluten-free, crushed

  • 1/2 cup (50g / 1.8oz) almond flour

  • 3 tablespoons (45g / 1.6oz) refined coconut oil, melted

  • 5 pieces (110g / 3.9oz) pitted Medjool dates

  • 2 tablespoons (30g / 1.1oz) strong coffee

  • Filling
  • 500g / 17.6oz mascarpone, room temperature

  • 300g / 10.6oz whipping cream 33%, cold

  • 3 tablespoons (36g / 1.3oz) coconut sugar powder

  • 1 teaspoon vanilla extract

  • 1 tablespoon cacao powder

Instructions

  • Soak pitted dates in hot water for 15 minutes. Then drain the water.
  • Place dates, coconut oil and strong coffee in a blender bowl. Grind everything until smooth. 
    In a bowl, mix almond flour and crushed rolled oats. Add date mixture. Gather all the ingredients into one lump. 
  • Place the crust mixture on the bottom of the pan. Before doing this, place parchment on the sides of the pan. Place the crust in the refrigerator for 15 minutes.
  • Pour whipping cream into a bowl. Add coconut sugar and vanilla extract. Whip the cream until stiff peaks form.
  • Add half the mascarpone to the whipped cream and beat with a mixer for a few seconds. Then add the remaining mascarpone and beat again.
  • Spoon the filling onto the crust and spread evenly into the pan. Place Tiramisu Cake in the refrigerator for 4 hours. After this time, remove the cake from the mold and sprinkle cacao powder on top.

Notes

  • Cup 250 ml, tablespoon 15 ml, 1 teaspoon 5 ml.
  • Form 18 cm / 7 inch and parchment paper.
  • Store Tiramisu Cake in a tightly sealed container in the refrigerator for up to 3 days. For long-term storage, place the dessert in the freezer.
