Chocolate Peach Bars

These Chocolate Peach Bars are filled with a fluffy fruit filling. These vegan, gluten-free bars are coated in delicious homemade chocolate. And of course this dessert is made without refined sugar. Chocolate Peach Bars are perfect for breakfast or snack. Especially if you add a cup of aromatic coffee to them. Making chocolate bars is very simple. This requires the most common ingredients.

Ingredients Vegan Bars

I decided to use the ingredients from the peach cheesecake recipe to fill the bars. I just made some minor changes to the proportions of the products. The filling turned out to be very tender. I did a similar experiment with my blueberry bars recipe.

For the filling you will need soaked cashews, coconut milk, cacao butter, coconut syrup, vanilla extract, dark chocolate and fresh peaches. Canned peaches are also fine. Cacao butter can be replaced with coconut oil. I prefer cacao butter. It does not melt at room temperature and adds a chocolate flavor to the dessert. Before cooking, soak cashews for 8 hours or overnight.

To prepare the bars, you also need a 10 cm x 15 cm pan and parchment paper. Today I used a box lid as a mold.

How to make Chocolate Peach Bars

The process for making Chocolate Peach Bars is very simple. First, use a blender to combine the soaked cashews, coconut milk, cacao butter, coconut syrup, vanilla extract, and 1/2 cup peaches. Cut the peaches into pieces 5 – 7 mm. Use the blender until the mixture becomes smooth.

Then transfer the filling to a bowl and add another 1/2 cup of peaches. Now just mix everything with a tablespoon. We should have pieces of fruit in the filling. Next, place the peach filling in the pan on parchment paper. Place the mold in the freezer for 2 hours until hardened.

When the filling has hardened, remove it from the mold and cut into portions. Place the prepared bars in the refrigerator. Now we will prepare the chocolate for the glaze. By the way, I have a recipe for delicious homemade chocolate on my website.

So. Melt the dark chocolate in a double boiler or microwave. Then heat the chocolate to 45°C / 110°F. Then cool to 27°C / 80°F. Stir the chocolate constantly with a silicone spatula. So that the chocolate cools down quickly, put something cold under the bowl. Then heat the chocolate to 31°C / 88°F. This is the working temperature at which we will coat the bars with chocolate.

Chocolate Peach Bars

Dip the bar blanks into melted chocolate and place on parchment. Then place the bars in the refrigerator for 1 hour until the chocolate hardens. Store Chocolate Peach Bars in a tightly sealed container for 3 days in the refrigerator. For long-term storage, place the bars in the freezer.

These Chocolate Peach Bars are filled with a fluffy fruit filling.

Ingredients

  • 1 cup (150g) cashews, soaked

  • 5 tablespoons (50g) cacao butter, melted

  • 5 tablespoons (50g) coconut milk

  • 2 tablespoons  coconut syrup

  • 1 teaspoon vanilla extract

  • 1 cup (150g) sliced peaches

  • 150g (5.5 ounces) dark chocolate without sugar

Instructions

  • In a blender, combine soaked cashews, coconut milk, cacao butter, coconut syrup, vanilla extract and 1/2 cup peaches. Cut the peaches into pieces 5 – 7 mm. Use the blender until the mixture becomes smooth.
  • Transfer the filling to a bowl and add another 1/2 cup peaches and stir with a spoon.
  • Pour the filling into the pan on the parchment paper. Place in the freezer for 2 hours. Cut the frozen filling into portions.
  • Melt the chocolate in a steam bath or microwave and temper it. Dip each bar in chocolate and place on parchment paper. Place the bars in the refrigerator for 1 hour.

Notes

  • Cup 250 ml, tablespoon 10 ml.
  • Form 10 cm x 15 cm (4 x 6 inches) and parchment paper.
  • Soak cashew nuts for 8 hours or overnight before cooking. Change the water periodically.
