These Vegan Chocolate Orange Bars are gluten free and simply delicious. Airy filling with orange aroma and delicious homemade chocolate. What could be better? Are you hungry and want a snack? Bars work very well for this. Especially if you add a cup of aromatic coffee to them. Chocolate bars are easy to make. And this does not require special products or skills.
Ingredients
To make the filling tender, I used the ingredients from the no-bake cheesecake recipe. The base of this recipe is cashew nuts. Before cooking, soak cashews for 8 hours or overnight in cold water. To prepare the bars you also need refined coconut oil, vanilla extract, coconut syrup, orange juice and zest.
The frosting requires delicious dark chocolate. Chocolate is easy to make at home. You can find out how to do this on my website.
You can use cacao butter instead of coconut oil. With cacao butter, the filling will not melt at room temperature. I’ve done this before in a peach bar recipe. Instead of coconut syrup, maple syrup or coconut sugar will work fine.
To prepare the bars, you also need a 10 x 15 cm (4 x 6 inches) pan, parchment paper and a blender. Today I used the lid from a small box as a form.
And so let’s get started.
How to make Chocolate Orange Bars
The process of making the bars is very simple. Place soaked cashews, refined coconut oil, vanilla extract, coconut syrup, orange juice and zest in a blender bowl. Grind everything until smooth. Then pour the filling into the pan onto the parchment paper and smooth it out with a silicone spatula. Next, place the mold in the freezer for 3 hours until hardened.
After hardening, remove the filling from the mold and cut into portions. I got 12 bars. Then place the bar preparation in the refrigerator. And start preparing the glaze.
Melt the dark chocolate in a water bath or in the microwave and temper. You can find out how to temper chocolate in the recipe card below. Dip each bar into melted chocolate and place on parchment paper. Next, place the bars in the refrigerator for 1 hour until the chocolate hardens.
Store Chocolate Orange Bars in a tightly sealed container in the refrigerator for up to 3 days. For longer storage, put the dessert in the freezer.

1/5 cup (50g / 1.8oz) orange juice

Instructions
- In a blender, puree soaked cashews, refined coconut oil, vanilla extract, coconut syrup, orange juice and zest until smooth.
- Pour the filling into the pan on the parchment paper. Place the filled form in the freezer for 3 hours.
- Remove the filling from the pan and cut into portions. Place the bars in the refrigerator while you prepare the frosting.
- Melt dark chocolate any way you like. Do the tempering. Dip bars into melted chocolate and place on parchment paper. Place the bars in the refrigerator for 1 hour to set the chocolate.

- Tempering chocolate:
- Heat the chocolate to 45°C / 110°F. Try not to overheat the chocolate. Then cool the chocolate to 27°C / 80°F, stirring constantly with a silicone spatula.
